Perfect for Customization
One of the best things about this dish is its versatility. You can swap ingredients to suit your preferences: use cream cheese along with milk for a richer sauce, try different leafy greens like arugula or kale instead of spinach, or even switch smoked salmon for smoked trout. You could also change up the pasta to your favorite type or add pine nuts or fresh dill instead of caviar for a twist.

Whether you’re preparing this dish for a busy weeknight or a special occasion, it’s a crowd-pleaser that’s effortless to make and full of flavor.

Instructions

  1. Mince the garlic. Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 1-2 minutes, stirring frequently.

  2. Add the heavy cream, vegetable broth, salt, and freshly ground black pepper. Bring to a boil.

  3. Add the pasta, spinach, and smoked salmon to the skillet. Reduce the heat and simmer until the pasta is cooked through (check package instructions). If the sauce is too thick, add a bit of hot water to thin it out.

  4. Stir in Parmesan cheese if desired. Season with salt and pepper to taste.

  5. Garnish with salmon caviar before serving.
